Rotisserie chicken is one of my favorite ready-made meals. It’s not something that I always remember to get especially with all the hustle and bustle during the week and with my kids’ practices I usually just hit a drive thru or order take out. 

My friend Diane shared some of her family recipes for using a rotisserie chicken and I just had to share them with you guys.
You can use canned chicken for these recipes, but Diane said they taste better with the rotisserie chicken.
Sam’s Club seems to have the best deal on rotisserie chicken under $5

Yummy Chicken Sammies
2 cups rotisserie chicken
2 cups smashed potato chips
1 can Campbell Cream of Chicken soup
½ can milk
½ can water
Mix together and bake at 350 degrees.  Bake for 45 to an hour. 
Serve on buns

Chicken ala Queen Diane
1 rotisserie chicken cut up in larger pieces
½ small onion chopped
Diced potatoes (1 big one for each person)
½ cup diced celery – not to small
¼ cup carrots-
1 can chicken broth
1 jar of chicken gravy
1 can cream of chicken soup

Cook onion, potatoes, celery, and carrots in broth until soft,   Add chicken, soup and gravy
Add milk to thin down if needed. Cook on simmer for 10 minutes
Serve over biscuits or rice


You can also cook both of these recipes in a crockpot.
